ALL SWEET POTATOES, ALL THE TIME!     (Cheri)

Last fall, Mark and I traveled to a local farm and bought a bushel of sweet potatoes.

We had a great time, and Mark talked up the farmer for a long time while I froze, but we unfortunately forgot to take any pictures.

I was going to use this lovely picture of a sweet potato farmer and his crop, but the artist didn't respond when I reached out to him.  You can find a treasure trove of his pictures and others of historical Texas at Traces of Texas on Facebook.

Sweet potatoes are the Official North Carolina Vegetable, and 40-60% of the country's supply comes from here, depending upon whose data you rely upon.

It turns out, a bushel could feed two people for a very long time.  I probably won't buy this way again, as the sweet potatoes might have been seconds and we had to discard at least a third soon thereafter.  Nevertheless, for laughs, here is what we made with our haul:
  • Sweet Potato Tortilla Quiche

  • Sweet Potato Crunch Muffins

  • Salmon Tacos with Sweet Potatoes and Corn Fungus

  • Sweet Potato-Tangerine Waffles, with Oatmeal Pancakes and Apple Cider Syrup

  • "Sweet Potato Cake" Oatmeal

  • Chili on Sweet Potatoes

  • Sweet Potato Breakfast Casserole

  • Sweet Potato Yeast Rolls

  • Sweet Potato Chili Chicken Soup

  • Tex-Mex Breakfast Bowl

  • Green Thai Curry

  • Sweet Potato Salad with Orange-Maple Dressing

  • Spiced Sweet Potato Casserole

  • Sweet Potato-Oatmeal Muffins with Espresso Chips (a riff on pumpkin lattes)

  • and finally, Sweet and White Potato Hash Browns , with Okra!

This is too funny! It looks like you went to the far corners of internet recipes to come up with some of those. I had to google corn fungus, i.e. corn smut. Is that what you're talking about? Adventures in eating!

Yep, corn fungus, Donna! Sounds terrible, doesn't it? We had it at a new-wave Mexican restaurant in San Francisco, and it was great. I bought a bottle, but that was generally tasteless. I've since read that it is generally sold frozen.

If I cooked two new recipes a week from those I have *already* saved, I would need to live to be about 3,600. I guess I need to have a word with God; maybe there is some guarantee if you promise to keep trying new things?

What an array of recipes! I see that Mark thought they were wonderful!

I have a slice of sweet potato every day. It is full of delicious vitamins.

Cool, Judy! They are the Covington variety, which is reputed to be the best available.
